Step 4: In a small bowl or mason jar, whisk together the lemon juice, Dijon mustard, red wine vinegar, sugar, dried oregano, minced garlic, olive oil, salt, and pepper until smooth and well combined.
Step 5: Cover and refrigerate the salad and dressing separately until you’re ready to serve.
Step 6: Just before serving, pour the dressing over the salad and toss until everything is evenly coated.

Drying the lettuce well helps the dressing coat every bite instead of sliding off the greens.
