A fresh, hearty Italian chopped salad made with crisp lettuce, chickpeas, tomatoes, savory meats, mozzarella, and a homemade vinaigrette. Perfect for warm summer days when you don’t want to heat up the kitchen.

For the Salad

2 cups spring mix or chopped romaine lettuce

7 ounces chickpeas, drained and rinsed

1 1/2 cups cherry tomatoes, quartered

1/2 cup pickled red onions

5 ounces chopped salami

5 ounces chopped ham

1 cup mozzarella pearls

1/4-1/2 cup sliced pepperoncini peppers

2 tablespoons freshly grated Parmesan cheese (optional)

For the Dressing

1 tablespoon fresh lemon juice

1 tablespoon Dijon mustard

1 1/2 tablespoons red wine vinegar

2 teaspoons sugar

1/2 teaspoon dried oregano

1 clove garlic, minced

3 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

Step 1: Wash and thoroughly dry the lettuce, tomatoes, and chickpeas.

Step 2: Chop the lettuce, cherry tomatoes, pickled red onions, pepperoncini, salami, and ham into bite-sized pieces.

Step 3: Add the lettuce, chickpeas, tomatoes, pickled red onions, salami, ham, mozzarella pearls, and pepperoncini to a large serving bowl.

Step 4: In a small bowl or mason jar, whisk together the lemon juice, Dijon mustard, red wine vinegar, sugar, dried oregano, minced garlic, olive oil, salt, and pepper until smooth and well combined.

Step 5: Cover and refrigerate the salad and dressing separately until you’re ready to serve.

Step 6: Just before serving, pour the dressing over the salad and toss until everything is evenly coated.
