Ingredients Needed

Spring mix or romaine
Chickpeas
Cherry tomatoes
Pickled red onion
Salami
Ham
Mozzarella pearls
Pepperoncini
Lemon juice
Dijon mustard
Red wine vinegar
Sugar
Dried oregano
Garlic
Olive oil
Salt
Black pepper

Equipment Needed

Large salad bowl
Small bowl or mason jar
Whisk
Cutting board
Knife

Instructions

Step 1: Wash and thoroughly dry the lettuce, tomatoes, and chickpeas.

Step 2: Chop the lettuce, cherry tomatoes, pickled red onions, pepperoncini, salami, and ham into bite-sized pieces.

Step 3: Add the lettuce, chickpeas, tomatoes, pickled red onions, salami, ham, mozzarella pearls, and pepperoncini to a large serving bowl.

Step 4: In a small bowl or mason jar, whisk together the lemon juice, Dijon mustard, red wine vinegar, sugar, dried oregano, minced garlic, olive oil, salt, and pepper until smooth and well combined.

Step 5: Cover and refrigerate the salad and dressing separately until you’re ready to serve.

Step 6: Just before serving, pour the dressing over the salad and toss until everything is evenly coated.

Tips & Tricks

Drying the lettuce well helps the dressing coat every bite instead of sliding off the greens.

Start with 1/4 cup of pepperoncini if you’re serving little ones, then add more to taste for extra zip.

Making the dressing 15–30 minutes ahead gives the flavors time to blend together.

Chop the ingredients into similar-sized pieces so every bite has a little bit of everything.

Variations

Swap the ham for grilled chicken, turkey, or leftover rotisserie chicken.

Add diced cucumber, black olives, or artichoke hearts for even more fresh flavor.

Use provolone instead of mozzarella pearls for a different take.

Storage & Leftovers
