A fresh and filling summer meal made with crisp romaine, tender chicken, homemade Caesar dressing, Parmesan, and crunchy croutons, all wrapped in a soft tortilla.
1 head romaine lettuce, chopped
2 cups cooked chicken breast, grilled or roasted and chopped
2/3 cup croutons, lightly crushed
1/2 cup freshly grated Parmesan cheese
4-6 large flour tortillas
For the Caesar Dressing1 cup mayonnaise
2 cloves garlic, minced
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
2 teaspoons Worcestershire sauce
1/2 cup freshly grated Parmesan cheese
Juice of 1/2 lemon
2 tablespoons olive oil
Pinch black pepper
Step 1: Wash and thoroughly dry the romaine lettuce before chopping it into bite-sized pieces.
Step 2: Chop the cooked chicken and lightly crush the croutons.
Step 3: In a small bowl, whisk together the mayonnaise, garlic, Dijon mustard, white wine vinegar, Worcestershire sauce, Parmesan cheese, lemon juice, olive oil, and black pepper until smooth and creamy.
Step 4: Add the chopped romaine, chicken, croutons, and Parmesan cheese to a large bowl.
Step 5: If preparing ahead, cover the salad and refrigerate, keeping the dressing separate until you’re ready to eat.
Step 6: Just before serving, toss the salad with the desired amount of dressing.
Step 7: Spoon the salad into flour tortillas, fold in the sides, roll tightly, and serve immediately.
