Hearty Beef Barley Soup

A big pot of beef barley soup is the kind of meal that makes a house feel warm and welcoming. It’s hearty, simple, and exactly the sort of supper I want when the weather turns cold and everyone is ready for something filling.

The beef is seared first to build a rich base, then the vegetables are cooked in the same pot before everything is brought together with beef broth, tomato paste, Worcestershire sauce, and barley. As it simmers, the broth becomes deeply savory and the barley makes the soup wonderfully hearty.

This is also one of those recipes that gets better with time. It’s delicious the day you make it, but if you can let it sit for a while, the flavors have even more time to come together. It’s especially good after a day or two in the refrigerator, making it a wonderful soup to have waiting for an easy meal.

Why You’ll Love This Hearty Beef Barley Soup

This soup is hearty enough to serve as a full meal, with tender pieces of beef, plenty of vegetables, and chewy pearl-like barley in a rich beef broth. Searing the beef first gives the soup a deeper flavor, while cooking the vegetables in the same pot makes the most of all those browned bits left behind.

It’s also a great make-ahead meal. The flavors continue to develop as the soup rests, so don’t be afraid to make it a day or two before you plan to serve it.

Ingredients Needed

Stew meat
Salt
Black pepper
All-purpose flour
Butter
Carrots
Celery
Onion
Garlic
Tomato paste
Beef broth
Beef bouillon
Worcestershire sauce
Bay leaves
Quick barley

Equipment Needed

Large Dutch oven or soup pot
Large bowl
Wooden spoon
Chef’s knife
Cutting board

Instructions

Step 1: Season and Sear the Beef

Dice the stew meat into smaller pieces if needed. Season generously with salt and pepper, then sprinkle with flour and toss to coat.

Heat a large pot over medium heat. Sear the beef on all sides, working in batches so you don’t overcrowd the pot. The beef does not need to be cooked through at this point.

Remove the browned beef to a bowl and set aside.

Step 2: Sauté the Vegetables

Add some butter to the same pot. Add the diced carrots, celery, and onion.

Sauté for about 5–8 minutes, stirring occasionally, until the vegetables begin to soften.

Step 3: Add the Garlic and Tomato Paste

Add the minced garlic and cook for about 1 minute, until fragrant.

Stir in the tomato paste and cook briefly, allowing it to mix into the vegetables and build flavor.

Step 4: Add the Broth and Beef

Pour in the beef broth and add the beef bouillon, Worcestershire sauce, and bay leaves.

Return the seared beef and any accumulated juices to the pot. Stir everything together.

Step 5: Simmer the Soup

Bring the soup to a simmer and cook for about 30 minutes, allowing the beef and vegetables to cook and the broth to develop its flavor.

Step 6: Add the Barley

Bring the soup to a boil. Add the quick barley, then reduce the heat to a simmer.

Cover and cook for about 12 minutes, or according to the barley’s cooking time.

Step 7: Season and Rest

Taste the soup and adjust with additional salt, pepper, and beef bouillon as needed.

Allow the soup to simmer and rest for a little while before serving if you have the time. The flavors continue to come together as it sits.

Tips & Tricks

Sear the beef in batches so it has room to brown rather than steam.

The beef does not need to be cooked through during the initial sear.

Don’t discard the browned bits left in the bottom of the pot. They add wonderful flavor to the broth.

Taste before adding additional bouillon since both the broth and bouillon can vary in saltiness.

This soup is especially good after it has had time to sit and the flavors have had a chance to develop.

Variations

Use regular barley instead of quick barley, adjusting the cooking time according to the package directions.

Add additional carrots or celery if you want an even more vegetable-filled soup.

For a thicker soup, let it simmer uncovered for a little while before serving.

Storage & Leftovers

Store leftover soup in an airtight container in the refrigerator for up to 4 days.

This soup is particularly good after a day or two in the refrigerator as the flavors have more time to come together.

The barley will continue to absorb broth as the soup sits, so add a little extra beef broth when reheating if needed.

Reheat gently on the stovetop until hot.

Some soups are best made when you know you’ll have leftovers. This is one of them.

The longer this soup sits, the more the flavors seem to settle into one another. I especially love having a pot tucked away in the refrigerator for the next day or two, when all it takes is a gentle reheat to have a hearty homemade supper ready.

It’s simple, filling food that feels right at home on a cold evening.
