A quick and cozy pasta made with butter, garlic, parmesan, and a little pasta water to bring it all together.
8 oz pasta of choice
4 tablespoons butter
1/4 cup diced onion
4 cloves garlic, minced
1/2 teaspoon salt
pinch black pepper
pinch red pepper flakes (or to taste)
1/2-1 teaspoon dried oregano
1/3 cup freshly grated parmesan
1/4 cup reserved pasta water
Optional:
peas
heavy cream (for a creamier sauce)
1. Cook the pasta
Cook pasta in salted water until al dente.
Reserve about ¼ cup of pasta water before draining.
2. Cook the onion
In a skillet over medium heat, melt the butter.
Add diced onion and cook for about 5 minutes, until tender and lightly caramelized.
3. Add garlic and seasoning
Stir in garlic and red pepper flakes.
Cook for about 60 seconds, just until fragrant.
4. Build the sauce
Add salt, pepper, oregano, parmesan, and reserved pasta water.
Stir to combine into a light, glossy sauce.
5. Add peas (optional)
Stir in peas and cook until heated through.
6. Add pasta
Add the cooked pasta and toss until everything is evenly coated.
7. Optional additions
Add a splash of cream if using, and heat through.
