These flaky buttermilk biscuits are buttery, tender, and layered from gently folding the dough before baking. Serve them warm from the oven with plenty of butter.

Ingredients

Units Scale
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup butter, cubed and very cold
  • 1 1/4 cups buttermilk

Instructions

Step 1: Combine the dry ingredients

Combine the flour, baking powder, salt, and sugar in a large mixing bowl.

Step 2: Cut in the butter

Cut the very cold, cubed butter into the flour mixture until coarse crumbs form and some small pieces of butter remain.

Step 3: Add the buttermilk

Add the buttermilk and gently mix just until a dough forms. Do not overwork the dough or use your hands too much.

Step 4: Fold the dough

Roll the dough out to ½ inch thick. Fold it over, roll it again to ½ inch thick, and fold it one more time.

Step 5: Cut the biscuits

Roll the dough to about ¾ inch thick. Cut out biscuits without twisting the cutter.

Step 6: Bake

Bake at 425°F for 15–20 minutes, or until golden brown.

Step 7: Add butter

Top the hot biscuits with butter and serve warm.
