A creamy cucumber sauce made with sour cream or Greek yogurt that’s perfect for dipping, spreading, or serving alongside Mediterranean-inspired meals.

Ingredients

1/2 cucumber, shredded and squeezed well to remove excess moisture 1 cup sour cream or plain Greek yogurt 1-2 cloves garlic, minced 1-2 teaspoons fresh lemon juice 2 teaspoons olive oil 1/4 teaspoon salt 1-2 teaspoons fresh dill, chopped Pinch black pepper

Instructions

Step 1: Shred the 1/2 cucumber using the large holes of a box grater.

Step 2: Squeeze out as much liquid as possible using a clean kitchen towel or paper towels.

Step 3: Add the cucumber to a mixing bowl along with the sour cream or Greek yogurt, garlic, lemon juice, olive oil, salt, dill, and black pepper.

Step 4: Stir until well combined.

Step 5: Taste and adjust the garlic, lemon juice, salt, or dill as needed.

Step 6: Refrigerate for at least 30 minutes before serving for the best flavor.
