Best Ever Banana Bread

Banana bread is one of those recipes that is handy to have around when you have a few very ripe bananas to use up. This version makes a soft, moist loaf with plenty of banana flavor, a little cinnamon, and a tender crumb.

I like this recipe because it doesn’t need much fuss. Everything comes together in one bowl, and about an hour in the oven gives you a loaf that is ready to slice and enjoy.

It’s good warm with a little butter, alongside breakfast, or simply sitting on the counter for everyone to grab a slice when they want one. And if you have bananas that are past the point where anyone wants to eat them, this is a pretty good way to put them to use.

Why You’ll Love This Bread

The key to this banana bread is using very ripe bananas. The more spotted and soft they are, the more banana flavor and natural sweetness they bring to the loaf.

A little brown sugar adds depth, while the yogurt or sour cream gives the bread a tender crumb. Using both butter and oil also helps keep it moist without making it feel overly rich.

It is a straightforward recipe that comes together quickly, and you don’t need any special equipment. Just mix the ingredients, pour the batter into a loaf pan, and let the oven do the rest.

Ingredients Needed

Overripe Bananas

Granulated Sugar

Light Brown Sugar

Plain Yogurt or Sour Cream

Unsalted Butter

Neutral Oil

Eggs

Vanilla Extract

All-Purpose Flour

Baking Soda

Ground Cinnamon

Salt

Equipment Needed

Large Mixing Bowl

Medium Mixing Bowl

Measuring Cups and Spoons

Fork or Potato Masher

Whisk

Rubber Spatula

9 x 5-Inch Loaf Pan

Wire Cooling Rack

Instructions

Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan or line it with parchment paper.

Mash the overripe bananas until mostly smooth. A few small pieces are fine.

Add the sugar, brown sugar, yogurt or sour cream, melted butter, oil, eggs, and vanilla. Whisk until well combined.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Add the dry ingredients to the wet ingredients and gently stir until just combined. Be careful not to overmix.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for about 1 hour, or until a toothpick inserted into the center comes out clean. If using a thermometer, the center should reach about 200°F.

Let the bread cool in the pan for several minutes, then transfer it to a wire rack to finish cooling before slicing.

Tips & Tricks

Use very ripe bananas with plenty of brown spots for the best flavor and texture.

Measure the mashed bananas rather than relying only on the number of bananas. Their size can vary quite a bit.

Bring the eggs and yogurt or sour cream to room temperature before mixing for a smoother batter.

Don’t overmix once the flour is added. Stir just until you no longer see dry flour.

If the top is browning too quickly before the center is finished, loosely tent the loaf with foil.

Let the bread cool before slicing. This gives the crumb time to set and makes cleaner slices.

Variations

Fold in ½–1 cup of chopped walnuts or pecans for a little crunch.

Add a handful of chocolate chips for a sweeter, dessert-like loaf.

Add a little extra cinnamon or a pinch of nutmeg for more warm spice.

Sprinkle the top with a little coarse sugar before baking for a lightly crisp, sweet crust.

Spread a warm slice with butter, peanut butter, or cream cheese.

Storage & Leftovers

Store cooled banana bread in an airtight container or wrap it tightly and keep it at room temperature for several days.

For longer storage, wrap the loaf tightly and freeze it for up to 3 months.

You can also slice the bread before freezing so you can pull out individual pieces as needed.

Let frozen slices thaw at room temperature or warm them gently before serving.

This is the kind of recipe I like having around for those bananas that have gotten a little too far past their prime. Instead of letting them go to waste, they turn into something everyone is happy to see on the counter.

A warm slice with a little butter is hard to beat, especially when the loaf is fresh from the oven.
