Peach Shortbread Crumble Bars are one of my favorite desserts to bake during late summer. There are few things that signal the arrival of late summer quite like a basket of ripe peaches sitting on the kitchen counter. Around here, I always try to make the most of whatever season we’re in, whether that’s gathering fresh herbs from the garden, preserving the harvest, or simply baking with fruit while it’s at its sweetest.

These Rustic Peach Shortbread Crumble Bars have quickly become one of my favorite ways to celebrate peach season. A buttery shortbread crust, a warm jammy peach filling, and a rustic oat crumble come together in a dessert that’s simple enough for an ordinary afternoon but special enough to linger over after supper with family.

Ingredients Needed

Butter

Light brown sugar

Flour

Old-fashioned oats

Baking powder

Kosher salt

Vanilla extract

Almond extract (optional)

Fresh peaches

Cornstarch

Instructions

Step 1: Cream together the butter and brown sugar until light and fluffy.

Step 2: Mix in the vanilla and almond extract, if using.

Step 3: Stir in the flour, oats, baking powder, and salt until a soft, crumbly dough forms.

Step 4: Press ⅔ of the mixture into a greased 9×9-inch baking dish. Reserve the remaining for the crumble topping.

Step 5: In a saucepan, combine the peaches, brown sugar, cornstarch, vanilla, cinnamon, and salt. Cook over medium heat for 5–7 minutes, stirring occasionally, until slightly thickened.

Step 6: Spoon the warm peach filling evenly over the crust.

Step 7: Sprinkle the reserved crumble over the peaches.

Step 8: Bake for 35–40 minutes, or until the topping is lightly golden and the filling is bubbling.

Step 9: Cool for at least 20 minutes before slicing and serving.

Tips & Tricks

Choose ripe, but still firm peaches. Very soft peaches will release more juice and create a looser filling. Peaches that give just slightly when gently squeezed are perfect.

Don’t skip cooking the filling. A quick trip on the stovetop helps the peaches release their juices and allows the cornstarch to begin thickening, giving you a rich, jammy filling that isn’t runny.

Leave the crumble rustic. Instead of sprinkling tiny crumbs over the top, gently squeeze some of the dough together with your fingers to create larger crumbles. It gives the bars a beautiful homemade look.

Allow the bars to cool before slicing. As tempting as it is to dig in right away, giving them 20–30 minutes to cool helps the filling set and makes cleaner slices.

These bars are delicious served warm with a scoop of vanilla ice cream, a dollop of homemade whipped cream, or simply enjoyed with a hot cup of coffee on the porch.

Variations

Fresh peaches are best, but frozen peaches work well too. Thaw and drain any excess liquid before cooking the filling.

If you don’t have almond extract, simply leave it out. The vanilla and peaches are delicious on their own.

Try swapping the peaches for nectarines, apricots, or even a mixture of peaches and blueberries for a fun seasonal variation.

Old-fashioned rolled oats give the crumble its rustic texture. Quick oats can be used in a pinch, but the topping won’t have quite the same hearty bite.

For an autumn version, replace the peaches with thinly sliced apples or pears and add a little extra cinnamon for a cozy fall dessert.

Storage & Leftovers

Store covered in the refrigerator for up to 4 days.

Warm in the oven, toaster over or microwave.

  • 1 cup unsalted butter, softened
  • 2/3 cup packed light brown sugar
  • 2 cups all-purpose flour

  • 3/4 teaspoon baking powder

  • 2 teaspoons vanilla extract

Jammy Peach Filling
  • 56 ripe peaches, peeled and sliced
  • 1/31/2 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of kosher salt

Instructions

Make the Shortbread

  1. Preheat the oven to 350°F. Grease a 9×9-inch baking dish.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Mix in the vanilla and almond extract, if using.
  4. Stir in the flour, oats, baking powder, and salt until a soft, crumbly dough forms.
